The patented design utilizes the rim to attach the handle from every direction by simple sliding its top half just by one hand – even while you are cooking. The handle is carved out of one piece of solid wood at the factory in Tendo-City, Yamagata, Japan, and is available in light beech wood or dark walnut wood.

Although JIU looks like a plate, it is one of the highest quality iron frying pans. It is manufactured by metal spin forming process. Original hardening and tempering process, which uses over 700 degree quenching, makes the iron frying pan to be rust resistant and stick resistant. 1.6mm thick steel plate allows ingredients to be cooked slowly and thoroughly even by low heat. According to the manufacturer, it brings juicy texture of meat, crunchy texture of vegetables, and bread can be crispy on the outside and chewy on the inside.
